It does look tempting, and definitely a springtime dish with fern heads. I don't think I could lop off my emerging fern heads just to enjoy a dish. Do more emerge if that is done?
I don't know if the plant sends up more sprouts, but generally there are enough that you can take a few without hurting the bed. I don't know what you have but normally there are several ferns in a given place. Just be certain the type you have is edible and palatable.
